  • 8 fresh figs(Mission or Tiger, slightly yielding)
  • 3 tbsp cultured butter(Divided (2 tbsp for pan-frying, 1 tbsp for figs))

    In a wide, shallow dish, aggressively whisk 3 large eggs, 1/2 cup whole milk, 1/4 cup heavy cream, 2 tbsp toasted sugar (or light brown sugar), 1 tsp orange zest, 1 tsp vanilla bean paste, and 1/2 tsp flaky sea salt.
