  • 8 oz Sugar snap peas(Strings removed)

  • 1/2 cup Coconut milk(Full fat, well shaken)
  • 1/4 cup Fresh lime juice(About 2 limes worth)
  • 1 tbsp Fish sauce(Your liquid umami gold)
  • 1 cup Fresh basil leaves(Packed, roughly chopped, divided)
  • 1/2 cup Fresh mint leaves(Packed)
  • 1 clove Garlic clove(Finely grated)
  • 1 Bird's eye chili(Thinly sliced (use half a serrano if preferred))
  • 1 cup Cucumber(Cut into half-moons)

Instructions

Meanwhile, prepare your cooling station: fill a large bowl with 4 cups ice and cold tap water. This ice bath is our secret weapon for beating the summer heat and locking in crunch.
