  • 1 whole rotisserie chicken(Meat shredded, skin removed (yields about 4 cups))
  • 1/2 head Napa cabbage(Shredded)
  • 1 large English cucumber(Cut into half-moons)
  • 1 cup matchstick carrots(Store-bought pre-shredded is my weeknight cheat code)
  • 1/2 cup fresh cilantro(Roughly torn)
  • 1/2 cup fresh mint(Roughly torn)
  • 1/2 cup roasted peanuts(Crushed)
  • 1/3 cup crispy fried onions(Store-bought)

Instructions

    At your cutting board (aka tonight's departure gate!), toss together 1 firm mango, julienned, 1 large shallot, thinly sliced, 1/3 cup rice vinegar, 1 tbsp granulated sugar, and 1/2 tsp kosher salt in a small bowl. Toss well and let this sit to quick-pickle while you assemble the rest of your dinner trip.
