Welcome to Departure Gate Number Cutting Board, my friends! Today we are boarding a non-stop flight to tropical coastal bliss. The inspiration for this bowl hit me during a chaotic layover where I desperately craved the warming coastal spices of Goa mixed with the fiery, citrusy punch of a Mexican street cart mango. Back home and staring down a boring Tuesday, I raided the fridge and spun globe-trotting flavors into reality! What makes this recipe so wildly special is how it completely rescues you from mid-day desk fatigue in under fifteen minutes. We are taking humble, time-saving rotisserie chicken and giving it a high-energy spa treatment with warm spices, pairing it with massive handfuls of fresh mint and cilantro, and tossing it all with quick-pickled chili mangoes in a zesty cumin-lime jar dressing. My biggest tip for making it your own? Don't be shy with the lime juice or the crunch. Swap the cabbage for shredded Brussels sprouts if that is what is lurking in your crisper drawer. Now grab your mason jar, shake up that dressing like you mean it, and let us travel the world together from the comfort of our kitchens!

Ingredients

  • 1.5 cups Firm ripe mango, diced(slightly firm mangoes hold their texture best when pickling)
  • 5 tbsp Fresh lime juice(divided: 3 tbsp for quick pickle, 2 tbsp for dressing)
  • 1 tbsp Jalapeño, finely diced(remove seeds for mild heat)
  • 0.75 tsp Sea salt(divided: 0.5 tsp for pickle, 0.25 tsp for dressing)
  • 4 tsp Honey(divided: 1 tsp for pickle, 1 tbsp (3 tsp) for dressing)
  • 2.5 cups Pre-cooked rotisserie chicken breast, shredded(skin removed)
  • 1 tsp Garam masala
  • 1 tsp Ground cumin(divided: 0.5 tsp for chicken, 0.5 tsp for dressing)
  • 3 cups Shredded green cabbage
  • 1 cup English cucumber, thinly sliced
  • 1 cup Red bell pepper, thinly sliced
  • 0.5 cup Fresh cilantro, coarsely chopped(leaves and tender stems)
  • 0.5 cup Fresh mint, torn
  • 0.25 cup Toasted pepitas (pumpkin seeds)
  • 3 tbsp Extra virgin olive oil
  • 1 tsp Fish sauce or soy sauce(for instant savory umami)

Instructions

  1. 1

At departure gate 1 (a.k.a. your trusty cutting board), combine 1.5 cups firm ripe mango, diced, 3 tbsp fresh lime juice, 1 tbsp finely diced jalapeño, 0.5 tsp sea salt, and 1 tsp honey in a medium bowl. Give it a gentle toss and let those tropical juices brine while you prep the rest.

    5 min

Tip: Quick pickling works magic in minutes! The lime juice softens the sweet mango while drawing out its juicy brightness.

  2. 2

In a small mason jar, add 3 tbsp extra virgin olive oil, 2 tbsp fresh lime juice, 0.5 tsp ground cumin, 1 tbsp honey, 1 tsp fish sauce or soy sauce, and 0.25 tsp sea salt. Screw the lid on tight and shake vigorously until emulsified.

    3 min

Tip: Mason jars are the ultimate weekday shortcut—shake, pour, and store any leftover dressing right in the jar.

  3. 3

Place 2.5 cups shredded rotisserie chicken breast in a mixing bowl. Sprinkle with 1 tsp garam masala and 0.5 tsp ground cumin, tossing thoroughly so every bite of chicken is warmed up with aromatic Goan-inspired spices.

    3 min

Tip: Rotisserie chicken is my secret weapon for low-effort, high-impact weeknight and desk-lunch wins.

  4. 4

Finely shred 3 cups green cabbage, thin-slice 1 cup English cucumber and 1 cup red bell pepper, and roughly chop 0.5 cup fresh cilantro and 0.5 cup fresh mint.

    5 min

Tip: Keep mint leaves whole or coarsely torn right before serving so they stay bright green and aromatic.

  5. 5

Divide cabbage, cucumber, and bell pepper into two portable salad containers. Layer on the spiced rotisserie chicken, then spoon over the quick-pickled chili mango along with a spoonful of its tangy pickled nectar. Top with 0.25 cup toasted pepitas, cilantro, torn mint, and a generous drizzle of your mason jar dressing.

    3 min

Tip: Pack dressing and pickled mangoes in separate small containers if you are prepping this for work the next day!

Chef's Notes

Whenever spreadsheets and pileups at work start wearing me down, I mentally board a flight from the spice markets of Goa to the sun-soaked plazas of Yucatán! Pickling fresh mango with lime and jalapeño creates this electric sweet-tart-spicy crunch that instantly turns simple rotisserie chicken into an extraordinary mid-day getaway. Pack this for the office, close your eyes between emails, and enjoy your delicious escape!
