Ingredients

  • 14 oz extra-firm tofu(pressed dry and cut into 3/4-inch cubes)
  • 2 tbsp cornstarch(for creating that ultimate golden crust)
  • 2 tbsp avocado oil(or any high-heat neutral cooking oil)
  • 2 cups cantaloupe(diced into 1/2-inch bite-sized cubes)
  • 1/3 cup rice vinegar(unseasoned)
  • 3 tbsp fresh lime juice(divided between pickle, dressing, and glaze)
  • 2 tbsp honey(divided; use maple syrup for a 100% vegan option)
  • 1 tsp sea salt(divided)
  • 4 cups Napa cabbage(thinly shredded)
  • 1 cup English cucumber(sliced into thin half-moons)
  • 1/2 cup fresh cilantro(leaves and tender stems, roughly chopped)
  • 1/2 cup fresh mint(roughly chopped)
  • 2 tbsp tamarind paste(concentrated paste or concentrate)
  • 1.5 tbsp soy sauce(or tamari for gluten-free)
  • 1 tsp toasted sesame oil
  • 1 clove garlic(finely grated)
  • 1 tsp fresh ginger(finely grated)
  • 2 tbsp roasted peanuts(roughly chopped for crunch)

Instructions

    At departure gate one (your cutting board!), prep your pickling liquid. In a shallow bowl, whisk together 1/3 cup rice vinegar, 1 tbsp lime juice, 1 tbsp honey, and 1/2 tsp sea salt. Submerge 2 cups cantaloupe in the brine and toss well. Set aside to quick-pickle for 15 minutes while you get everything else soaring.

    Pat 14 oz extra-firm tofu dry with paper towels. Cut into cubes, toss in a bowl with 2 tbsp cornstarch and 1/2 tsp sea salt until every cube is lightly and evenly coated.

    Heat 2 tbsp avocado oil in a large non-stick skillet over medium-high heat. Add the coated tofu cubes in a single layer. Fry for 8 to 10 minutes, flipping occasionally, until golden-brown and crispy on all sides.

    While the tofu sizzles, make your signature mason jar dressing. Combine 1 tbsp lime juice, 1/2 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp fresh ginger, and 1/2 tbsp honey in a glass jar. Seal tightly and shake vigorously until emulsified.

    In a small cup, stir together 2 tbsp tamarind paste, 1 tbsp soy sauce, 1 tbsp lime juice, and 1 clove garlic. Once the tofu is ultra-crispy, turn off the heat, pour this tamarind glaze directly into the skillet, and toss the tofu quickly for 30 seconds until glossy and coated.
