  • 4 cups Shredded Napa cabbage(thinly shredded)
  • 1 cup English cucumber, thinly sliced(half-moons)
  • 0.5 cup Red bell pepper, thinly sliced(julienned)
  • 0.5 cup Fresh cilantro, coarsely chopped(stems and leaves)
  • 0.5 cup Fresh mint, coarsely chopped(leaves only)
  • 0.25 cup Coconut milk (full fat)(canned)
  • 1 tbsp Fish sauce(for umami richness)
  • 1 tbsp Honey(or agave nectar)
  • 1 tsp Grated fresh ginger(freshly grated)
  • 2 tbsp Toasted unsweetened coconut flakes(for topping)
  • 2 tbsp Roasted unsalted peanuts, chopped(for topping)
