  • 1.5 tbsp honey(divided: 1/2 tbsp for pickle, 1 tbsp for dressing)
  • 1 tsp kosher salt(divided)
  • 2 tbsp low-sodium tamari or soy sauce
  • 1.5 tbsp toasted sesame oil
  • 1 clove garlic(finely grated)
  • 4 cups Napa cabbage(shredded thinly)
  • 2 Persian cucumbers(thinly sliced into half-moons)
  • 1/2 cup fresh cilantro(leaves and tender stems roughly chopped)
  • 1/2 cup fresh mint(roughly torn leaves)
  • 3 stalks scallions(thinly sliced on the bias)
  • 1 ripe avocado(cubed)
  • 1/4 cup crispy fried shallots(store-bought or homemade, for final crunch)

Instructions
