Ingredients

  • 9 oz refrigerated cheese tortellini(Do not use dried tortellini for this, fresh/refrigerated is key for texture)
  • 1/3 cup store-bought zesty Italian dressing(Your favorite brand, or swap for a pesto vinaigrette)
  • 1 pint cherry tomatoes(Washed and dried)
  • 8 oz mini mozzarella balls (ciliegine)(Drained well)
  • 4 oz thinly sliced spicy salami(Pepperoni works great too)
  • 1 bunch fresh basil leaves(Medium to large leaves)
  • 1/2 cup pitted castelvetrano olives(Kalamata or black olives are fine if you prefer)
  • 2 tbsp balsamic glaze(Store-bought squeeze bottle)

Instructions

    Bring a medium pot of salted water to a boil over high heat. Drop in 9 oz refrigerated cheese tortellini and cook according to package directions. We're looking for al dente here, which usually only takes about 3 minutes.
