Listen, I used to be that person who skipped breakfast because I would rather hit snooze. But after one too many mornings running out the door with just a lukewarm coffee, I knew I needed a hack. That is how my Cheat Code Grab-and-Go Crescent Egg Cups were born. The inspiration? Pure, unadulterated desperation on a Tuesday when I was late for a recipe shoot. I had a can of store-bought crescent dough (yes, I use it, and yes, it is magical) and half a dozen eggs. I pressed the dough into a muffin tin, cracked the eggs right in, and tossed them in the oven while I hunted for my car keys. They came out perfectly golden, flaky, and packed with exactly what I needed to survive the morning. What makes these special is that they actually happen. No 47-step prep, just real food fast. Want to make them yours? Throw in whatever is dying in your fridge. Spinach? Do it. Leftover taco cheese? Highly recommend. Skip the cilantro if it tastes like soap to you. Just bake, grab, and go win your day. Delicious does not have to be difficult, even at 7 AM.

"Cheat Code" Grab-and-Go Crescent Egg Cups

Mornings are chaotic, but your breakfast doesn't have to be a casualty of the clock. These grab-and-go egg cups use my favorite crescent dough shortcut to give you a hot, protein-packed breakfast in under 20 minutes. Just press the dough into a muffin tin, crack an egg, sprinkle your toppings, and let the oven do the heavy lifting while you hunt for your keys.

Ingredients

  • 1 can (8 oz) refrigerated crescent dough(standard 8-count tube)
  • 8 large eggs
  • 1 cup sharp cheddar cheese(shredded)
  • 1/4 cup real bacon bits(from the pouch, not the crunchy hard bits)
  • 1 tbsp Everything Bagel seasoning
  • 1 spray nonstick cooking spray(for the muffin tin)

Instructions

  1. 1

Preheat your oven to 375°F (190°C) and generously spray 8 cups of a standard muffin tin with 1 spray nonstick cooking spray.

    2 min

Tip: Don't skip the spray, even if you have a nonstick pan. Melted cheese loves to cling to the edges.

  2. 2

Unroll the 1 can (8 oz) refrigerated crescent dough and separate it into 8 triangles. Press one triangle into each greased muffin cup. You want the wide base of the triangle in the bottom and the pointy tip hanging over the edge.

    3 min

Tip: If the dough tears, just pinch it back together. We're going for rustic and fast, not perfection.

  3. 3

Sprinkle about 2 tablespoons of the 1 cup sharp cheddar cheese into the bottom of each crescent-lined cup.

    1 min

Tip: Putting the cheese down first creates a barrier so the egg doesn't make the crescent dough soggy on the bottom.

  4. 4

Carefully crack one of the 8 large eggs directly on top of the cheese in each cup. Sprinkle evenly with the 1/4 cup real bacon bits and the 1 tbsp Everything Bagel seasoning. Gently fold the overhanging dough point back over the top of the egg.

    3 min

Tip: If you're nervous about shell pieces during the morning rush, crack the eggs into a small measuring cup first, then pour them in.

  5. 5

Bake in the preheated oven for 12 to 14 minutes. This timing gives you set whites and a slightly jammy yolk. If you prefer a hard-cooked yolk, add 2 to 3 more minutes.

    14 min

Tip: Ovens vary, so peek at them around the 12-minute mark. The crescent dough should be golden brown.

  6. 6

While the egg cups are baking in the oven, take this time to brew your coffee, pack lunches, or just stand in the kitchen enjoying a moment of peace.

    14 min

Tip: Passive cooking time is the ultimate morning cheat code. Let the oven work for you.

  7. 7

Remove from the oven and let them rest in the tin for 2 minutes. Run a spoon around the edges to pop them out cleanly.

    2 min

Tip: These are completely portable! Grab a paper towel and eat them in the car if you have to.

Chef's Notes

Listen, I love frying bacon as much as anyone, but on a Tuesday at 7 AM? Absolutely not. Grab those pouches of real cooked bacon bits from the salad aisle. They are one of my favorite savory cheat codes and they crisp up beautifully in the oven here. Want to customize? Swap the cheddar for Gruyere, or throw a pinch of chopped pickled jalapeños in there if you need a wake-up kick. You can also bake these, let them cool entirely, and keep them in an airtight container in the fridge for up to 3 days. Just microwave for 20 seconds to take the chill off!

Delicious doesn't have to be difficult

I spent a decade in restaurant kitchens before my daughter was born and I realized I needed a different relationship with food. The 16-hour days had to end, but my love of cooking didn't. Now I'm obsessed with the puzzle of making genuinely good food achievable on a Tuesday night. No weird ingredients, no 47-step processes—just smart techniques and bold flavors that come together fast. Because life is too short for boring weeknight dinners.
