Ingredients

  • 4 (6-oz) fillets salmon fillets(Skin on or off, whatever you prefer)
  • 2 medium zucchini(Halved lengthwise and sliced into thick half-moons)
  • 1 pint cherry tomatoes(Left whole)
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp harissa paste(Store-bought jarred paste. Use mild if you are sensitive to heat!)
  • 2 tbsp honey
  • 1 tbsp soy sauce(The secret ingredient for salt and umami balance)
  • 1/3 cup feta cheese(Crumbled)
  • 1/4 cup fresh dill(Roughly chopped (can sub mint or parsley))

Instructions

    Preheat your oven to 425°F. On a large rimmed baking sheet, toss 2 medium zucchini and 1 pint cherry tomatoes with 2 tbsp olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Spread them out into an even layer.

    Tip: Don't crowd the pan! If your pan is too small, the veggies will steam instead of blister. Use two pans if you need to.

    Transfer the sheet pan to the oven and roast the vegetables for 8 minutes. We want to give them a head start so they get deeply tender and caramelized without overcooking the fish later.

    While the vegetables are roasting, grab a small bowl. Whisk together 2 tbsp harissa paste, 2 tbsp honey, and 1 tbsp soy sauce. This is your 'cheat code' glaze—it takes 30 seconds to make but tastes like it simmered all afternoon.

    Tip: Every brand of harissa is different. Give it a tiny taste—if it's super spicy, you can add another squeeze of honey to balance it out.

    Carefully remove the hot sheet pan from the oven. Push the partially roasted vegetables to the edges to clear a space in the center. Place the 4 (6-oz) fillets salmon fillets in the middle of the pan. Spoon the harissa-honey glaze generously over the top of each fillet.

    Tip: If your veggies gave off a lot of liquid, that's okay! It'll mix with the glaze drippings and create an amazing pan sauce.

    Return the pan to the oven and roast for another 10 to 12 minutes. You'll know it's done when the salmon is opaque and flakes easily with a fork, and the tomatoes have completely burst.

    Tip: If you want slightly charred edges on the salmon, flip the oven to broil for the final 90 seconds. Keep a very close eye on it!

    Remove the pan from the oven. Immediately scatter 1/3 cup feta cheese and 1/4 cup fresh dill all over the hot vegetables and salmon. Serve right off the pan!

Harissa is one of my absolute favorite pantry staples. It's a North African chili paste packed with garlic, citrus, and spices. If you aren't using it yet, this recipe will convert you! If you want to bulk this up for extra hungry eaters, serve it over some quick 90-second microwave quinoa or with warm pita bread to sop up the pan juices.
