Ingredients

  • 2 cans (5 oz each) canned tuna in olive oil or water(well-drained; oil-packed yields slightly richer flavor, but water-packed works great too)
  • 1/2 cup panko breadcrumbs(gives maximum crunch; standard breadcrumbs can be substituted in a pinch)
  • 1 large egg(lightly beaten)
  • 6 tbsp mayonnaise(divided; 2 tbsp for the patties, 4 tbsp for the dipping sauce)
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh dill or chives(finely chopped; flat-leaf parsley also works)
  • 1 lemon(zested for the patties, then halved for juice)
  • 1 tbsp capers(drained and roughly chopped)
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt(divided)
  • 1/4 tsp freshly cracked black pepper
  • 2 tbsp olive oil(for searing)
  • 1 tbsp fresh lemon juice(Squeezed from one half of the lemon.)
  • 1 tsp finely grated lemon zest(From the whole lemon.)
