  • 1 tsp smoked paprika
  • 3/4 tsp kosher salt(divided)
  • 1/2 tsp freshly ground black pepper(divided)
  • 4 large eggs(cold from the fridge makes them easier to slip into wells)
  • 1/3 cup sour cream(or plain whole milk Greek yogurt)
  • 1 tbsp fresh lime juice(from about 1/2 lime)
  • 1/4 cup cotija cheese(crumbled (or sub sharp cheddar))
  • 1/4 cup fresh cilantro(roughly chopped)
  • 2 tbsp scallions(thinly sliced)
