Let us talk about weeknight fish. I used to be terrified of cooking fish at home on a Tuesday, mostly because I hated the cleanup and the lingering smell. But this Sheet-Pan Harissa Butter Cod completely changed my mind. The inspiration hit me last summer when I was desperately trying to use up a zucchini harvest and a half-empty jar of harissa staring at me from the fridge door. I tossed everything onto one pan, melted some butter with honey and chili paste, and magic happened. What makes this recipe so special to me is how it bridges the gap between fancy restaurant food and real life. You get flaky cod, crunchy spiced chickpeas, and charred zucchini all from a single baking sheet with practically zero dishes to wash. And yes, you can totally swap the zucchini for bell peppers or broccoli depending on what is rotting in your crisper drawer. Trust me, keep a jar of harissa in your pantry and this dinner will save your weeknights just like it saves mine.

Ingredients

  • 4 fillets skinless cod fillets(about 6 oz each, patted dry)
  • 1 can canned chickpeas(15 oz, rinsed, drained, and thoroughly patted dry)
  • 2 medium zucchini(halved lengthwise and sliced into 1/2-inch thick half-moons)
  • 1 medium red onion(sliced into 1/2-inch wide wedges)
  • 2 tbsp extra-virgin olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 1/4 tsp kosher salt(divided)
  • 1/2 tsp black pepper(freshly cracked, divided)
  • 3 tbsp unsalted butter(melted)
  • 2 tbsp mild harissa paste(use spicy if you want a stronger kick)
  • 1 tbsp honey
  • 3 cloves garlic(grated or finely minced)
  • 1/3 cup feta cheese(crumbled)
  • 1/4 cup fresh cilantro or flat-leaf parsley(chopped)
  • 1 lemon(cut into wedges for serving)

Instructions

  1. 1

Position a rack in the center of your oven and preheat to 425°F (220°C). Grab a large rimmed baking sheet.

    2 min

Tip: Make sure your oven is genuinely up to temp before the pan goes in—roasting at true high heat is the secret to blistered veggies and crispy chickpeas.

  2. 2

Directly on the sheet pan, toss 1 can canned chickpeas, 2 medium zucchini, and 1 medium red onion with 2 tbsp extra-virgin olive oil, 1 tsp ground cumin, 1/2 tsp smoked paprika, 3/4 tsp kosher salt, and 1/4 tsp black pepper. Spread everything into a single layer across the pan.

    5 min

Tip: Dry the chickpeas aggressively with a clean kitchen towel before tossing them with oil. Water is the enemy of crispiness!

  3. 3

Slide the baking sheet into the oven and roast for 12 minutes, until the zucchini begins to brown on the edges and the chickpeas start sizzling.

    12 min

Tip: Give the pan a gentle shake halfway through if your oven has hot spots.

  4. 4

While the veggies roast, whisk together 3 tbsp unsalted butter, 2 tbsp mild harissa paste, 1 tbsp honey, and 3 cloves garlic in a small bowl. Pat 4 fillets skinless cod fillets completely dry with paper towels and season them with the remaining 1/2 tsp kosher salt and 1/4 tsp black pepper.

    5 min

Tip: If your cod was previously frozen, press extra paper towels firmly around it so you do not waterlog the sauce.

  5. 5

Carefully remove the baking sheet from the oven. Use a spatula to nudge the roasted vegetables toward the sides, clearing 4 spaces in the middle. Nestle 4 fillets skinless cod fillets onto the sheet. Spoon the prepared harissa butter evenly over each fillet, letting any extra drip onto the surrounding vegetables.

    2 min

Tip: Nestling the cod right onto the hot pan gives it instant thermal contact, locking in juices.

  6. 6

Return the sheet pan to the oven and roast at 425°F for 9 to 11 minutes, until the cod flakes easily with a fork and reaches an internal temperature of 135°F to 140°F.

    10 min

Tip: Thinner tail cuts will cook in 8-9 minutes, while thick center cuts might need 11-12 minutes. Check early with a fork—it should gently separate into translucent flakes.

  7. 7

Scatter 1/3 cup feta cheese and 1/4 cup fresh cilantro or flat-leaf parsley over everything, and serve straight from the pan with 1 lemon cut into wedges for squeezing over top.

    1 min

Tip: A bold squeeze of fresh lemon juice over the hot harissa butter right before eating cuts through the richness and brings the whole pan alive.

Chef's Notes

The biggest trap with sheet-pan fish is tossing delicate fillets into the oven at the same time as hearty vegetables—the fish turns to mush while the veggies stay pale. Staggering the cook time solves this completely! By giving the chickpeas and zucchini a 12-minute head start at 425°F, they develop deep charred edges while the cod roasts gently in that spiced harissa butter for just 10 minutes. If you're sensitive to heat, look for mild rose harissa; if you love spice, go for standard jarred Tunisian harissa. Yes, you can sub flat-leaf parsley if cilantro isn't your thing!
