  • 8 slices thick-cut bacon(chopped into 1/2-inch pieces)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper(freshly cracked)
  • 1.5 cups sharp cheddar cheese(shredded (freshly shredded melts best!))
  • 6 large eggs
  • 2 stalks green onions(thinly sliced)

Instructions

    Preheat your oven to 425°F (220°C) and line a large rimmed sheet pan (15x10-inch) with parchment paper. Spray lightly with nonstick spray.

    Dump 30 oz frozen shredded hash browns onto the sheet pan. Drizzle with 2 tbsp olive oil and sprinkle with 1 tsp garlic powder, 1 tsp onion powder, 1 tsp kosher salt, and 1/2 tsp black pepper. Mix right on the pan using your hands, then press the potatoes down firmly into a solid, even layer going all the way to the edges.
