This is my Tokyo-meets-Lima take on a classic izakaya bar snack. We use screaming high heat to aggressively blister shishito peppers, then toss them off-heat in a Peruvian-Japanese 'dynamite' sauce made of sweet lump crab, aji amarillo, and Kewpie mayo. The residual heat melts the fat into a smoky, sweet, and fiery glaze.

Ingredients

  • 8 oz Shishito peppers(washed and dried completely so they don't steam in the pan)
  • 1 tbsp Grapeseed or avocado oil(high smoke point is mandatory here)
  • 4 oz Lump crab meat(picked over carefully for shells)
  • 3 tbsp Kewpie mayonnaise(has to be Kewpie for the extra egg yolk richness)
  • 1.5 tbsp Aji amarillo paste(Peruvian yellow pepper paste, brings a fruity, bright heat)
  • 1 tbsp Fresh lime juice(about half a lime)
  • 2 whole Scallions(thinly sliced)
  • 1 tbsp Furikake(or toasted sesame seeds)
  • 1 tsp Flaky sea salt(like Maldon)

Instructions

    Place a large cast-iron skillet over high heat and let it get screaming hot. Do not add oil to the pan yet—we want it bone dry to start to guarantee a hard sear.

    Tip: If a drop of water dances and immediately evaporates, the pan is ready.

    While the pan preheats, whisk together 3 tbsp Kewpie mayonnaise, 1.5 tbsp Aji amarillo paste, and 1 tbsp Fresh lime juice in a medium bowl until smooth. Stir in the 2 whole Scallions, then gently fold in the 4 oz Lump crab meat, being careful not to break up the beautiful lump pieces.

    Tip: Don't overmix the crab. You want distinct chunks in the final dish.

    In a separate bowl, toss the 8 oz Shishito peppers with the 1 tbsp Grapeseed or avocado oil. Once the skillet is smoking, dump the peppers in.     Kill the heat entirely. Immediately scrape the crab mixture directly into the hot pan with the peppers. Toss vigorously for 30-45 seconds. The residual heat of the cast-iron will thin the mayonnaise into a rich, clinging glaze and perfectly warm the crab without overcooking it.
