Ingredients

  • 8 oz Dried soba noodles(Look for 100% buckwheat if possible, though blends work well too)
  • 3 whole Jalapeños(Stems removed. Leave seeds in if you like heat, remove for milder flavor)
  • 3 cloves Garlic(Peeled)
  • 4 oz Sugar snap peas(Strings removed)
  • 6 oz Asparagus(Woody ends snapped off)
  • 1/2 cup Shelled edamame(Thawed if using frozen)
  • 2 tbsp Toasted sesame paste (Nerigoma) or Tahini(Stirred well before measuring)
  • 2 tbsp Shiro shoyu (white soy sauce)(Regular light soy sauce works as a substitute)
  • 2 tbsp Rice vinegar(Unseasoned)
  • 1 tbsp Fresh lime juice(Freshly squeezed)
  • 1/3 cup Grapeseed or neutral oil(Do not use olive oil, the flavor is too strong)
  • 1 tbsp Toasted sesame seeds(For garnish)
  • 2 tbsp Fresh shiso leaves or cilantro(Chiffonade (thinly sliced) for garnish)

Instructions

    Bring a large pot of lightly salted water to a rolling boil. While waiting, prepare a large bowl of ice water. Trim the strings off 4 oz sugar snap peas and snap the woody ends off 6 oz asparagus. Cut the stems off 3 whole jalapeños and peel 3 cloves garlic.

    Drop the 3 whole jalapeños and 3 cloves garlic into the boiling water. Blanch for 3 minutes. This denatures the enzymes that make raw aromatics overly pungent and harsh, while locking in that bright green color. Use a spider strainer to transfer them immediately to the ice bath.

With the motor running, slowly stream in 1/3 cup grapeseed oil until the sauce turns thick, creamy, and emulsified.
