  • 1 tbsp Soy sauce (shoyu)
  • 2 tsp Toasted sesame oil(Divided use)
  • 1/2 tsp Kosher salt
  • 1 cup Japanese short-grain rice(Uncooked)
  • 1.25 cups Dashi stock(Kombu-dashi or chicken/veg dashi)
  • 1 tbsp Toasted white sesame seeds
  • 2 Fresh peaches(Pitted and cut into thick wedges)
  • 2 tbsp Ponzu sauce
  • 2 tbsp Red onion(Finely diced)
  • 1/4 cup Fresh cilantro(Roughly chopped)
  • 1 tsp Chili crisp or Sichuan pepper oil(Optional for added heat)
  • 2 tbsp Avocado oil or neutral cooking oil(For searing)

Instructions

    In a small bowl, whisk 2 tbsp Red miso (aka miso), 1 tbsp Guajillo chile powder, 1 tbsp Soy sauce (shoyu), 1 tsp Toasted sesame oil, and 1/2 tsp Kosher salt until a thick paste forms. Rub paste evenly across all surfaces of 14 oz Extra-firm tofu slices. Place on a tray to cure at room temperature for 15 minutes.
