Shio Koji-Cured Wild Salmon Bowl with Charred Mango Pebre & Coconut-Dashi Rice

Wild-caught salmon gets a fast shio koji cure, rendering the flesh silky and deeply umami-rich before a hard sear. Paired with aromatic coconut-dashi jasmine rice and a bright Chilean-Japanese charred mango pebre salsa, this bowl balances sweet, salty, smoke, and acid in every bite.

Ingredients

  • 1.5 lbs Wild-caught salmon fillets(center-cut, skin-on, divided into 4 portions)
  • 3 tbsp Shio koji(liquid or paste)
  • 1.5 cups Jasmine rice(rinsed until water runs clear)
  • 1 cup Unsweetened coconut milk(full-fat canned)
  • 1 cup Dashi stock(dashi stock or dashi dissolved in water)
  • 1 large Fresh mango(firm-ripe, peeled and diced into 1/4-inch pieces)
  • 1 cup Fresh corn kernels(fresh or thawed frozen)
  • 0.5 cup Cilantro(finely chopped)
  • 0.5 cup Red onion(finely diced)
  • 1 tbsp Aji amarillo paste(Peruvian yellow chile paste)
  • 3 tbsp Fresh lime juice(squeezed fresh)
  • 1 tsp Yuzu kosho(green yuzu kosho paste)
  • 1 tbsp Toasted sesame oil(for finishing drizzle)
  • 2 tbsp Neutral cooking oil(avocado or grapeseed oil)
  • 1 tsp Kosher salt(divided)

Instructions

  1. 1

Coat 1.5 lbs Wild-caught salmon fillets evenly with 3 tbsp Shio koji. Cover and let cure at room temperature for 15 minutes to allow enzymes to season and tenderize the fish.

    15 min

Tip: Don't exceed 20 minutes for salmon fillets; fish absorbs shio koji much faster than red meat or poultry.

  2. 2

In a medium saucepan, combine 1.5 cups Jasmine rice, 1 cup Unsweetened coconut milk, 1 cup Dashi stock, and 0.5 tsp Kosher salt. Bring to a simmer over medium-high heat, cover with a tight lid, reduce heat to low, and cook for 15 minutes. Remove from heat and steam covered for 5 minutes.

    20 min

Tip: Replacing half the cooking water with dashi infuses the sweet coconut rice with grounding umami.

  3. 3

Heat a dry cast-iron pan over high heat. Add 1 cup Fresh corn kernels and dry-char for 4 minutes until spotty and fragrant. In a bowl, toss the corn with 1 large Fresh mango, 0.5 cup Cilantro, 0.5 cup Red onion, 1 tbsp Aji amarillo paste, 3 tbsp Fresh lime juice, 1 tsp Yuzu kosho, and 0.5 tsp Kosher salt.

    8 min

Tip: This salsa is a Nikkei play on Chilean pebre, marrying Andean Aji Amarillo with Japanese citrus-chile paste.

  4. 4

Gently wipe excess 3 tbsp Shio koji off 1.5 lbs Wild-caught salmon fillets using paper towels. Heat 2 tbsp Neutral cooking oil in a large skillet over medium-high heat. Place salmon skin-side down, press gently with a spatula, and cook for 4 minutes until skin is crisp. Flip and sear for 2 minutes until cooked to medium-rare.

    7 min

Tip: Wiping off excess shio koji prevents the natural koji sugars from burning before the fish is cooked through.

  5. 5

Divide the hot coconut-dashi rice between four wide bowls. Top each portion with a crispy shio koji salmon fillet and a generous spoonful of charred mango pebre. Drizzle each bowl with 1 tbsp Toasted sesame oil before serving.

    3 min

Tip: Drizzle the sesame oil around the rice rather than over the salmon skin so the skin stays shatteringly crisp.

Chef's Notes

Why this works: Shio koji is pure enzymatic magic on wild salmon. The protease enzymes break down fish proteins into glutamic acid (pure umami), while amylase converts starches into simple sugars. A short 15-minute cure penetrates the salmon deeply, ensuring the flesh stays remarkably juicy even under intense heat. The fatty, savory salmon is balanced by a Nikkei adaptation of Chilean pebre, bringing heat from Peruvian aji amarillo and sharp citrus complexity from yuzu kosho.
