Last week, I ran into Mateo—he’s the wonderful grower who brings those unbelievable Black Mission figs to the Santa Barbara stall. He handed me one still warm from the sun, and I knew instantly what had to happen. Back in Paris, we would have done a heavy tart with pastry cream, but here in California? We want sunshine, not a food coma. So I swapped the pastry cream for a whipped Meyer lemon and orange blossom mascarpone, tucked it into shatteringly crisp puff pastry, and crowned the whole thing with honey-roasted figs and toasted pistachios. It brings the pure indulgence of a Parisian morning bakery straight to your sunny patio. My biggest tip? Don't stress the puff pastry. Store-bought all-butter sheets are my best friend on a lazy Sunday. Just get the highest quality butter you can find, and maybe pour yourself a glass of chilled pét-nat while you bake. Ingredients

  • 1 sheet All-butter puff pastry sheet(thawed in the refrigerator overnight)
  • 8 oz Fresh Black Mission figs(stemmed and quartered longitudinally)
  • 8 oz Mascarpone cheese(slightly softened)
  • 3 tbsp Orange blossom honey(divided)
  • 1 tsp Meyer lemon zest(finely grated)
  • 1/2 tsp Vanilla bean paste
  • 1 tsp Fresh thyme leaves(lightly bruised)
  • 1 large Egg(beaten for egg wash)
  • 1 tbsp Whole milk(mixed with egg)
  • 2 tbsp Turbinado sugar(for sprinkling on borders)
  • 3 tbsp Roasted salted pistachios(coarsely chopped for garnish)

Instructions

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    In a medium bowl, whisk together 8 oz Mascarpone cheese, 1 tbsp Orange blossom honey, 1 tsp Meyer lemon zest, and 1/2 tsp Vanilla bean paste until creamy and velvety.

    In a small bowl, gently toss 8 oz Fresh Black Mission figs with 1 tbsp Orange blossom honey and 1 tsp Fresh thyme leaves.

    Transfer pastry rectangles to your lined baking sheet. Spread two tablespoons of citrus mascarpone cream within scored border of each rectangle. Arrange sweet fig quarters over cream. Whisk 1 large Egg with 1 tbsp Whole milk, brush borders with egg wash, and sprinkle with 2 tbsp Turbinado sugar.

    Bake in preheated oven for 20 to 22 minutes until pastry edges are dramatically puffed and deep golden amber, and figs are tender and bubbly.

    Remove from oven and allow pastries to set on baking sheet for 5 minutes. Drizzle remaining 1 tbsp Orange blossom honey over warm figs and scatter 3 tbsp Roasted salted pistachios on top before serving.
