  • 3 tbsp avocado or canola oil(Divided)
  • 1/2 whole fresh pineapple(Sliced into 1/2-inch thick half-moons (core intact is fine for searing))
  • 1 whole ripe avocado(Pitted and scooped)
  • 1/4 cup chopped cilantro(Leaves and tender stems)
  • 12 whole corn tortillas(Yellow or white corn)
  • 1/2 cup pickled red onions(Store-bought or quick homemade)

Instructions

Blitz until smooth. In a bowl, toss 1.5 lbs arrachera (skirt steak) with the marinade to coat. Set aside while you prep the pan.
