We’re pairing a vibrant emerald pistachio-herb crust pressed over thick, flaky halibut with a ruby-toned braise of burst tomatoes, saffron, and sour cherries. And because it's my kitchen, we’re serving the whole stunning mess over a cool, silky pool of lemon tahini that mixes with the hot braising juices to create an instant sauce of pure magic.

  • 4 tbsp Extra-virgin olive oil(Divided use)
  • 4 (6oz) fillets Halibut fillets(Skinless, at least 1-inch thick)
  • 1/4 tsp Black pepper(Freshly ground)
  • 1 large Red onion(Halved and thinly sliced)
  • 1 pint Cherry tomatoes
  • 1 tsp Ground cumin
  • 1/3 cup Dried sour cherries(Look for unsweetened if possible)
  • 1/2 cup Raw tahini(High quality, well stirred)
  • 3 tbsp Fresh lemon juice(From about 1 large lemon)
  • 1/4 cup Ice water(Must be ice cold for the silkiest tahini texture)
  • 1/4 cup Pomegranate arils(For that final jewel-toned pop)
  • 1 cup cilantro(part of the mixed fresh herbs)
  • 1 cup parsley(part of the mixed fresh herbs)
  • 1 cup dill(part of the mixed fresh herbs)
