Ingredients

  • 1 tbsp neutral oil(Avocado, canola, or vegetable)
  • 12 oz fresh green beans(Buy the pre-washed, pre-trimmed bag to save time)
  • 1 lb ground turkey(93% lean, please do not buy 99% lean)
  • 3 cloves garlic(Minced or pressed)
  • 1/4 cup sweet chili sauce(Store-bought is perfect)
  • 2 tbsp soy sauce(Low sodium preferred)
  • 1 tbsp sriracha(Reduce to 1 tsp if you have picky eaters)
  • 1 tsp sesame oil(Toasted)
  • 1/2 cup crispy fried onions(The kind from a can you use on green bean casserole)

Instructions

    Heat a large skillet over medium-high heat. Add 1 tbsp neutral oil. Once the oil is shimmering and very hot, add 12 oz fresh green beans. Spread them out and let them sit completely undisturbed for 2 minutes so they get those nice blackened blister marks. Toss and cook for another 3 minutes until tender-crisp. Remove the beans to a plate.

    Tip: Do not salt the beans yet! Salt draws out moisture and will cause them to steam instead of blister.

    While the beans are blistering, grab a small bowl or liquid measuring cup. Whisk together 1/4 cup sweet chili sauce, 2 tbsp soy sauce, 1 tbsp sriracha, and 1 tsp sesame oil. Set aside.

    Tip: If you are serving little kids, drop the sriracha completely. The sweet chili sauce alone has a tiny kick that is usually safe.

    In the same hot skillet, add 1 lb ground turkey. Use a spatula to smash it down into a single flat layer covering the bottom of the pan. Leave it alone for 4 minutes. Do not stir it. We want a deep, golden-brown crust. Once you see the edges browning, break the meat up into bite-sized crumbles.

Listen to me: do not buy 99% lean ground turkey for this. It is meat dust and will taste like sadness. You need that 7% fat from the 93/7 mix to actually fry and crisp the meat properly in the pan. Also, we are absolutely using store-bought crispy fried onions. They are not just for Thanksgiving casseroles, they are the ultimate Tuesday night texture hack.
